This post is just in case it might be helpful to someone having trouble with their wireless Epson Inkjet printer being recognized. I spent hours trying to set mine up, and I was distracted by all the different protocols and ways it could be set up. The bottom line seems to be, if your printer isn't being recognized, this means that there is something wrong with its presence on the network. The following is a summary of what I found.
I bought a new PC last summer, and I must have set up my printer to use Epon's WiFi Direct option. However, when I looked at the setting, it also looked like the standard WiFi configuration was set. I had no problem printing from my Windows PC, but Ubuntu recognized it when I tried a new installation of that on my laptop. So, the first part of the solution is not to use WiFi Direct.
Second, I learned that I was required to create a new dedicated network on my router for the printer. Once I connected my printer to that network using the standard (recommended) connection method, Ubuntu found the printer.
If this can happen on Ubuntu, it's a possibility on other Linux distros and this might save someone else some time.
