I don't know if this is already the case, can a c64x be used as the keyboard for a kvm switch? If not, is it possible to do some kind of keyboard out?

Absolutely. The keyboard plugs into a motherboard so I imagine you would just need an adapter to USB. I've not done it personally, but I vaguely remember someone doing this at some point in the last 15 years.

Back in 2010 at Commodore USA we considered making a standalone keyboard by just using the top part of the C64x with a metal base.
I doubt it would have cut the cost of production enough beyond the cost of the full C64x case to warrant it though.
The majority of the cost comes from the keyboard section of course.

I'd love to know how you go.
